Winemaking
After a soft pressing and a maceration at a
temperature of 23°C for 6 days, the wine
exhausts slowly its fermentation at 18°C in
order to keep its fruity aromas unchanged.
Then the second fermentation in a pressure
tank is started to give this pleasant and rustic
wine a delicate petillant
